is there a way to count the number of files / images which have been uploaded to a field? Maybe something which can be applied retrospectively

Currently, we do not support formulas on multiple fields.
Therefore, counting the number of files/images in multiple fields is not supported, I’ve forwarded this feature requirement to the development team to see if this could be supported in the future.
Also, I’ve added you to the notification list and will keep you posted once there is an update.
You could also use Javascript workflow to accomplish this instead. Here is the document for your developer to refer to: Javascript Workflow Engine
