I’ve tried to delete one of my sheets but have realised it is linked to another and so this deletes all of the data. How do I unlink these sheets so that I can get rid of the data I don’t want?

Generally, it will happen if there are other sheets that have a link & load relationship with the sheet you would like to delete. You’ll need to find out the link & load and remove the link first. Then, you’ll be able to delete the sheet.
At the moment, there is no easy way to find out this and you’ll need to do it manually.
